Buckwheat Banana Bread (GF/ DF)
Buckwheat Banana Bread
4-5 bananas, mashed
1/3 cup nondairy butter, melted
2 eggs
1/3 cup brown sugar
1/3 cup maple syrup
1 teaspoon vanilla
1 3/4 cup buckwheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1/3 cup non dairy milk
Optional mix ins:
cinnamon chips
dark chocolate chunks
buckwheat groats
pecan pieces
Preheat oven to 350º F
Combine mashed bananas, eggs, butter, and vanilla
Add in brown sugar and maple syrup
In a separate bowl combine flour, baking soda, baking powder, salt, and cinnamon
Alternate adding in flour and milk, ending with milk, and mixing until just combined.
Add in any mixins you choose.
Line a bread pan with parchment, or grease with oil or butter
Pour in batter. The batter will be kind of like a gel, not too thick, not watery
Bake for about 60 minutes, or unti a toothpick inserted comes out clean
Allow to cool for 10 minutes before slicing
Buckwheat is one of our favorite ingredients. It’s also helpful that it’s an incredible food full of tons of health benefits. So, that being said, I want to share some of the perks of eating buckwheat.
Information about buckwheat:
Prevents heart disease, contains high levels of flavonoids.
It’s a seed, not a grain, and is gluten free. It’s also free of saturated fat and cholesterol, and high in protein and fiber, and has less calories than wheat or barley. Therefore, it also aides in weight loss.
Can reduce chances of contracting colon, gastric, or breast cancer
Improves digestion
Can support diabetes management because it contains inositol, which helps reduce blood sugar
Has tocopherols, phenolic acid, selenium, and flavonoids, which boosts the activity of other antioxidants like vitamin c and helps boost the immune system.
As an insoluble fiber it helps reduce the risk of gallstones.
Can help prevent asthma because it contains magnesium and vitamin e
Contains selenium and zinc which are important for strong bones, teeth, and nails
Has high iron content which helps with anemia.
Contains essential amino acids, like tryptophan, which supports serotonin production, boosting mood and clarity.
Promotes skin health, and protection from sun damage, because of the antioxidants and flavonoids. And the magnesium helps circulation, and inducing a radiant glow of the skin.
Great for healthy hair as it is rich in vitamin A, B-complex vitamins, and zinc.
Supports lactation
You can use buckwheat in groat, flour, or hull form. It is found at health food stores (I usually get it at Natural grocers or Sprouts). You can use it as filler for pillows, to add crunch to chocolate, granola, etc. You can use it as oatmeal, as you would any other gluten free flour, and so much more. Buckwheat has a nutty, earthy flavor that goes well with fruits, chocolate, and nuts. It’s delicious in cookies and breads, as a hot cereal and so much more. If you’ve never had it before, do a test sample in case of allergies. Once you kow you can have it, enjoy it to your hearts content. I do have other recipes featuring buckwheat.
