Recipe: Orange Blackberry Buckwheat Waffles (V/GF)

Since I like to cook (and eat) and I’m always taking pictures of my food, I decided to start sharing my recipes. A lot, but not all of my recipes are vegan and/ or gluten free. I am not actually vegan though, I just believe in moderation of all things. And I don’t do dairy, because I don’t like it. The few recipes that aren’t vegan, I will note changes that can be made to make them vegan.

1. This is the first and last intro I’m doing, after this I’ll just be posting recipes, and maybe additional info at the bottom of the posts.

2. I won’t be sharing EVERY recipe, but eventually the ones I post, along with some I don’t, will be available as eBooks for those of you who’d like to have access to them.

3. There will be a variety of different types of recipes, including baby food recipes.

4. I am not a food blogger, or photographer. I will try to take nice photos, but they won’t be fancy. The only thing I can promise is that there will a photo of at least the final product.

5. A lot of the recipes will be about nourishing lactating bodies, as I am currently nursing. So if you’re nursing, they will be good for providing support to your body and milk supply. BUT the recipes are tasty for ALL bodies, lactating or not

6. I like trying new ingredients, and tend to use a variety of different foods while cooking, so hopefully you’ll be able to try some new foods, and do so confidently.

Alright, now that that’s out of the way here we go!

Orange Blackberry Buckwheat Waffles

Makes 6-8 waffles

Ingredients:

Wet:

  • 2 flax eggs (2 tablespoons of ground flaxmeal + 6 tablespoons of water)

  • 1 tsp vanilla

  • 3 tablespoons of agave nectar/ maple syrup (or honey if you don’t need/ want it to be vegan)

  • 1 3/4 cup non dairy milk (I used unsweetened almond milk)

  • 3 tablespoons coconut oil (melted, then measured)

  • 1/4 cup fresh orange juice

  • zest of one orange

Dry:

  • 2 cups buckwheat flour

  • 1/3 cup coconut flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 tablespoon chia seeds

Add ins:

  • 1 cup blackberries (chopped, then measured) ** I personally think you could add even more and it would be delicious

Instructions:

Prep waffle maker

Turn oven to warm

  1. Mix together flax eggs (combine flaxmeal and water in a bowl) and set aside.

  2. Mix together dry ingredients in a large bowl

  3. In a separate bowl mix together remaining wet ingredients

  4. Once wet ingredients are combined, stir the flax egg, then add to wet ingredients, mix well

  5. Pour wet ingredients into dry, and combine until thoroughly mixed. The batter will be thick, and able to hold a rubber spatula standing upright in the center.

  6. Stir in blackberries until just combined.

  7. Lightly grease your waffle iron, spread batter evenly

  8. Cook to desired crispiness, and then place finished waffles in oven, on a baking sheet/ in a cake pan, to stay warm while finishing the rest of the batter.

  9. Top with butter and syrup, and additional blackberries if desired.

I love buckwheat flour, because of the earthy flavor, and the color it gives foods. It can be VERY dry in recipes if you don’t add enough wet ingredients, though, so if you play with it, keep that in mind.
